MEDITERRANEAN BIFUM SALAD
Ingredients:
7.05 oz of BIFUM
2 tbsp olive oil
2 sliced medium tomatoes
3/4 cup sliced mushrooms
1 cup ham (julienne)
3 tablespoons chopped pine nuts
4 sliced medium balls of buffalo mozzarella
1 thinly sliced zucchini
100g arugula
10 basil leaves
Salt and black pepper to taste
Instructions:
Hydrate Bifum according to package instructions. Drain and set aside.
Toast the pine nuts in a skillet until golden brown. Set aside.
Heat olive oil in a frying pan and add the zucchini slices, cooking for 5 minutes.
In a salad bowl, combine the mozzarella, arugula, basil leaves, and cooked zucchini slices.
Add the hydrated Bifum and sliced tomatoes to the bowl.
Season with salt and black pepper, then gently toss to combine.
Serve and enjoy!
Vegan Bifum
Ingredients:
7.05 oz of BIFUM.
2 shredded carrots.
1 cup chopped green beans.
1 seedless and chopped red bell pepper.
1/2 cup cashew nut.
2 tbsp low-sodium soy sauce.
Salt, black pepper, and sesame oil to taste.
Instructions:
Hydrate BIFUM according to package instructions. Drain and set aside.
In a non-stick tfrying pan, heat a little sesame oil and mix in the carrots, green beans, red bell pepper, soy sauce, and cashew nuts. Stir-fry for 3 minutes.
Transfer to a serving dish. In the same frying pan, add a little more sesame oil and sauté the BIFUM over low heat.
Add the pasta to the carrot and string bean mixture in the frying pan. Adjust seasoning with more salt, pepper, or sesame oil if needed.
Gently mix everything together and serve hot.
